Italian Stuffed peppers
Ingredient List:
6 medium peppers (red, green, yellow or orange which ever you prefer)
1 lb lean ground beef or ground turkey or chicken
2 eggs
1 cup Italian style breadcrumbs
1 minced yellow onion
1/2 cup grated Parmesan cheese
2 cloves minced garlic
1 large can whole peeled tomatoes
1 tsp oregano
1 tsp basil
1/2 tsp salt
1/2 tsp ground pepper
1/2 cup shredded mozzarella cheese
First, preheat oven to 350 degrees. Next, rinse and core peppers making sure to clean out all the seeds. Microwave peppers for a couple minutes just to soften them slightly. Mix together ground meat, eggs, breadcrumbs, onions, Parmesan cheese, salt, pepper, oregano and basil in large bowl. Roll mixture into large-sized meatballs (about the size of the pepper) and stuff into pepper. The pepper should be filled to the top. Place filled peppers into a baking dish and top each with a whole tomato. Pour any remaining tomatoes and juice over and around peppers in pan.Sprinkle shredded cheese over each pepper. Place in oven. Cook for approximately one hour or until meat is cooked thoroughly. The time may vary depending on the size of the peppers. Remove from oven and enjoy.
American Chop Suey
Ingredient List:
1lb package fat free egg noodles
1lb lean ground meat (beef, turkey, chicken, sausage or even tofu substitute)
1 yellow onion
4 cloves of garlic
2 tbls olive oil
1 large can diced tomato
11/2 tsp Italian seasoning
1 tsp salt
1/2 tsp pepper
1 cup shredded mozzarella cheese
Preheat oven to 350 degrees. Put on a large pot of water to boil for cooking pasta. Heat olive oil in a large skillet, add garlic and onions. Cook onions until they are translucent. Now add ground meat and break up and stir until it is fully cooked. Add the diced tomato and bring to a simmer. Season with salt, pepper and Italian seasoning, you can adjust to your own taste. Prepare egg noodles according to package. Drain noodles and transfer to 8x10 or 9x11 casserole dish. Pour meat and tomato mixture over noodles. Top with shredded mozzarella cheese and Parmesan, if you like. Place in oven for 15 to 20 minutes or until cheese is melted and slightly brown. Enjoy with a great loaf of garlic bread.
