1 ripe avocado
6 cherry tomatoes, diced
1 tablespoon jalapeno, minced
3 garlic cloves, minced
2 tablespoons sweet onion, minced
1 tablespoon lime juice
pinch kosher salt
1 teaspoon dried cilantro
Directions for Fast & Easy Guacamole

Prepare the Avocado
Cut the avocado in half with a sharp knife lengthwise around the large seed in the middle. Using a spoon, scrape the flesh away from the skin and place into a mixing bowl. Using a fork, mash the avocado, leaving a few chunks.2
Add the remaining ingredients
Add the tomato, jalapeno, garlic, onion, lime juice, salt and cilantro. Mix gently with a spoon.3
Refrigerate
Cover the guacamole with plastic wrap, being certain to press the wrap against the surface of the dip. Refrigerate for at least 1 hour up to 24 hours before serving.Tip
If you're able to plan ahead, buy an avocado that is still very firm. Let it ripen on your kitchen counter (do not refrigerate) until there's just a bit of "give" when you gently squeeze it.
