FAST AND EASY INDIAN CURRY
Hi my name is Vishali. I am a home maker and mom of a five month old. I love cooking but preparing an Indian meal takes lot of time and effort. Having a baby, dog, taking care of household chores and cooking can be very tedious.
I have tried to make my cooking fast and simple so that I could spend more time with my child and my hobbies. I came up with this basic curry recipe. This curry can be used as a base curry to cook many other varieties of curries.
Example:
If you want to cook vegetable curry, just add potatoes, ladies finger and eggplant to the base curry and simmer until the vegetable are cooked.
If you want to cook meat curry, just add the meat of your choice and simmer until the meat is cooked.
Ingredients
- 1 large onion chopped finely
- 3 cloves of garlic crushed
- 1 tea spoon ground cumin
- 1 tea spoon ground coriander
- 1/2 tea spoon turmeric
- 1 tea spoon garam masala
- 1 tea spoon salt
- 1 table spoon tomato paste
- 2 table spoon yogurt
- 1 tea spoon sugar
- Half cup of lemon juice
Cooking Method
- Heat oil in a frying pan and fry the onions for 1 minute
- Add garlic, fry for 1-2 minutes
- Add salt, sugar, turmeric, cumin and coriander and stir for 1 minute
- Add tomato paste, garam massala, yogurt and stir for 1 minute
- Add lemon juice and boil for 1 minute
- Cooking should be done under high heat.
- Serve with Basmati rice or Naan bread.
- The meal is ready in 15 minutes.

Additional Tips for Cooking Curry
If you are someone who likes to cook curry regularly, here are some tips to speed up cooking.
• If you are using potatoes, half cook the in microwave first
• If you are using meat, cook meat in microwave first
• If your are cooking meat, wash the meat with a little turmeric to get rid of smell
• Cut the meat in smaller portions so that it cooks faster
• You can even try using minced meat
• Buy yourself small bottles of ground coriander, cumin and garam massala
• Buy yourself a bottle of chopped or crushed garlic ( these are all must have ingredients in most curries)
• If you really hate preparing all these, you could buy the instant curry mix to make a base curry and add meat or vegetable. This will save you on preparation and cleaning time. You could purchase these instant curry mix at Walmart or other stores or online.
