Fast and Easy Sun Drop Cupcakes

I came back from my latest trip to North Carolina with more than a few 2 liters of Sun Drop. After scouring the Internet, I found several recipes for cakes made with Sun Drop, but none of them translated very well into cupcakes. It only took a few hours in the kitchen to come up with this recipe. Recently I took a batch of these to my family reunion and they disappeared pretty fast!

Cupcake Ingredients:

1 box Duncan Hines lemon flavored cake mix

3 eggs

¾ cup of oil

1 1/3 cup of Sun Drop

1 tablespoon of vanilla

I've tried this with a few different cake mixes, but the Duncan Hines works the best. The cupcake batter will look pretty runny when you've finished mixing everything together, but the end cupcakes are super moist and yummy.

Preheat your oven to 375 degrees.

Measure out the Sun Drop ahead of time and give it a few minutes to get flat. I've even let it sit out for a few hours and it still tastes great. If you try to add the Sun Drop straight into the bowl, the batter will turn really fizzy and be hard to mix.

Pour the Sun Drop into the bowl and give it a few minutes to settle down if it turns fizzy and then add the rest of the ingredients. Stir the mixture until everything is combined.

Add cupcake liners to a muffin pan and pour the cupcake mix into each liner, filling the liners up halfway. This one expands a lot and if you go over the halfway mark you'll end up with some enormous cupcakes. Bake the cupcakes for 18-22 minutes until done.

Frosting Ingredients:

1 can of vanilla flavored frosting

1 teaspoon vanilla

Green food coloring (optional)

For the frosting mix together all three ingredients until fluffy. You can also use lemon flavored frosting, but I've found that the vanilla makes a better contrast. The lemon flavoring is a little too much for me, but you might like it. The vanilla adds an extra layer to the frosting and makes it taste a little more homemade.

I like to add the green food coloring because it makes everything a little more colorful. Depending on how bright you want your frosting, add only a few drops or several drops.

Frost each cupcake and garnish in anyway you like! Green and yellow sprinkles or sugar can be a great way to let everyone know about the Sun Drop inside these cupcakes.
