(Serves a family of 4)
Salsa For Tacos
2 roma tomatoes, finely chopped
1 clove of garlic, minced
1/4 cup of lime juice or 2 limes, squeezed
lime zest
1 small onion, finely chopped
1 handful of cilantro, finely chopped
1 teaspoon of olive oil
1 part of a Serrano pepper, very finely chopped for heat (if desired)
Sea Salt and Pepper to taste
Mix all ingredients in a food processor for about 30 seconds and then refrigerate.
Healthy Tacos
1 package of skirt steak or 4 chicken breasts, cut into pieces
1/2 red onion, chopped
1 teaspoon of olive oil
Chopped cilantro, 1/2 for the meat, half for serving
1/2 can of black beans, mashed in food processor
1/4 cup lemon juice or the juice of 1 lemon
1/2 cup of mexican white cheese (found at most grocery stores)
Salt and Pepper to taste
8 corn tortillas
Heat skillet and add olive oil. Add meat, and pour lemon juice (or squeeze lemon) on the meat. Add salt and pepper and stir meat with ingredients in skillet until cooked through. Add onion, 1/2 of the cilantro and beans to meat mixture, stirring lightly for about 2 minutes until meat has absorbed liquid. In a separate small skillet, add non-stick spray to skillet and heat corn tortillas on each side for a minute or two until browned lightly.
To form tacos: Add meat mixture in corn tortilla, top with salsa (recipe above), some shredded cheese and cilantro and enjoy!!! You can also add avocado slices to your taco to give it a bit of pizazz!
