Fast Spanish Rice

This Spanish rice recipe is quick and easy. This is a good dish to start when scrambling to provide a quick and nutritious meal. The basic recipe is simple: cook 1 cup of rice in 2 cups of liquid. There are variable options depending on what is in your pantry.

To make this recipe you will need the following ingredients:

1 Cup white rice (we like Basmati)

1 small to medium white or yellow onion OR you could substitute ½ tsp onion powder

3 Tbsp extra virgin olive oil

1 Cup chicken broth

1 Cup water

2 Tbsp tomato paste OR 1 can diced tomatoes

Salt and pepper to taste

Large skillet with lid

Heat olive oil in pan on high heat. Toss in chopped onions, when the onions sizzle add the rice. If you are using onion powder add this later with your other seasonings to the wet ingredients.

While toasting the rice, stir occasionally to prevent burning. Toasting the rice takes just a minute or two.

It is best to mix the tomato paste with the broth and water; this is a good time to add your seasonings. Diced tomatoes, water, and broth can be added straight to the pan without premixing.

Add wet ingredients, stir and turn heat to low. Cover for 10-15 minutes. When most of the liquid is absorbed, uncover and cook for another 5 minutes. Turn off heat and fluff with a fork.

**Note if you use canned diced tomatoes, use ½ cup of water.

**Also be aware tomato paste will make deeper colored rice than diced tomatoes

    I've used this recipe several times and it always comes out delicious. I've even experimented a couple of times and added either red pepper flakes or hot sauce and it adds a great spicy touch.
