Father's Day Breakfast Apple Pancakes

2 cups Bisquick
1 egg
1 1/2 c. milk
1/2 tsp. cinnamon(add more if you like cinnamon)
3/4 c. grated apple

Beat Bisquick, egg and milk until smooth. Stir in apple and cinnamon. Spray fry pan or griddle with Pam. Pour on griddle or in pan. Fry until top bubbles and flip over. Finish frying. Serve with Apple Cider(or juice) Syrup (Hot).

Apple Cider or Juice Syrup

2 cups apple cider or apple juice
2 Tbsp. lemon juice
3 Tbsp. cornstarch
1/4 cup butter
1/2 tsp. pumpkin pie spice (or /14 tsp. cinnamon, 1/4 tsp. nutmeg
1 cup sugar

Cook in kettle; mix sugar cinnamon, nutmeg, cornstarch, stir apple cider (or juice) and lemon juice. Cook stirring constantly, until mixture thickens and boils. Boil and stir one minute after it has reached a boil. Remove from heat. Stir in butter.

Serve Apple pancakes with syrup, fresh fruit compote, bacon, sausage, ham, and eggs
