Favorite Summer Cheese Dishes

Summer is the season when we need the LESS carbohydrates. Too much carbohydrates are not advisable in humid and hot weather. Summer, thus, means more fruits, salads and protein. Protein gives us our Vitamin B Vitamins, particularly our B-12 which makes us less irritable when the heat is on. One of the most difficult thing sis to exercise or go jogging during the summers, thus, I try and cut my carbohydrates. I am aware however that I need my protein and I try and get most of them in fruits, vegetables and my favorite--CHEESE! Here are some of my summer favorite dishes, some of which I've learned from my travels to Asia (where some parts can be really hot) and Southeast Asia. Here are some of my favorites, though, I will admit that some may seem "unique" to some people:

-Cheese and Corn on Ice
This one is great during the hot days. I take a glass of crushed ice, add skim milk and some stevia (or sugar , or sweetener) and I remove the corn from the cob. If removing the corn from the cob is too tedious for you, then you can buy a corn in the can. Mix the corn inside a glass with the crushed ice, milk, sugar(or stevia) and top it with a thin slices of cheese. Mix even the ice. Enjoy your summer and eat! Delicious and healthy type of your own "home made version" of ice cream. Less calories too.

-Cheese and Hot Peppers with Avocado and Corned Beef
This one isn't just great for summers but also great for those on Low Carbohydrates diet. Get about two bell peppers and stuff it with avocado, onions, garlic, corned beef and cheese (cottage cheese is great). Fry in Olive Oil. Add salt and pepper to taste. Now, you have a heavy but low Carbohydrate meal. If you are on a vegan diet, you may replace the corned beef with veggie-meat.

-Faux Spaghetti with Bean Sprouts and Cheese
There is always Carbohydrate-danger in the "pasta". Now, this is my substitute pasta spaghetti. Instead of using pasta, I use bean sprouts and LOTS of them. Boil these bean sprouts and add a little Olive Oil. After about five minutes, drain and place at a separate bowl. Mix your spaghetti tomato sauce and add garlic, onions and meat. Top your spaghetti with lots of Parmesan cheese.

- Hot Pepper and Cheese Coleslaw
Take and cut your cabbage, add little bits of carrots, bits of onions and a little sour cream. To make your coleslaw richer and tastier, add cream cheese and little bits and pieces of habanero peppers (for those who like it hot). Use Ordinary bits of peppers if you are not too fond of spicy and hot. This salad is so delicious.

-Cheese Balls
Make your own Cheese Balls. This can be one of the best summer snacks. You would need Cream Cheese, Blue Cheese, mustard, garlic powder, little bits of almonds (ground). Mix together in a bowl until you get the taste that you want. Then form into soft Cheese balls. Rich and tasty appetizer. Goes well too with crackers or hardtack bread.

- Cheese Omelets with Anchovy and Shitake Mushroom
Cheddar cheese would be alright but the best is really Cream Cheese.Fry two eggs and make an omelet using cream or cheddar cheese, shitake mushroom pieces and bits of peppers. One of the best low carbohydrate breakfast.

- Vegetarian Mung-Cheese Dish
Boil water and drop the Mung beans when water boils. Let it stay for about 30 minutes. Drain the beans and saute' with bits of onions and garlic. Add Parmesan cheese and ground beef if you wish.

- Cheese and Vegetable Spring Rolls
Mince carrots, mushrooms, celery, squash bits,green onions and mix with Cream Cheese(you may add bean sprouts) . Wrap in thin spring roll (or egg roll wrapper which is sometimes called wanton wrapper or crepe' .Roll like small sausages into the wrapper and deep fry in Olive Oil. Great for snacks and meals.

-Cheese and Olives in Rice
Boil Rice in bullion soup. When the rice is cooked, remove from rice cooker and saute' using Olive Oil, Onions, Garlic, Chicken and top lots of Parmesan cheese. Great filling meal. This is almost like a combination of pizza and paella but it's better.

- Fried Lobster in Cheese
Lobster is great when fried in butter and pepper. Add about 3 tablespoons of cream, chopped garlic and cream cheese. While frying add some flour (for crisp) and wait until the dish turns golden brown. Another great meal. You may also do this with tuna belly, pink salmon steak, or any fish steak. Great with green salads.
