Festive and Fun Christmas Gob Recipe

Gobs are a rich dessert with fluffy, creamy filling between two small cake layers, and are sure to please anyone who remotely likes sugar. Here is a fun and festive Christmas idea for you to try. We make and package our gobs and send them with other goodies as gifts during the holidays to family members. Here's a list of ingredients you will need.

1 box of red velvet cake mix, brand does not matter. We use the red velvet for the Christmas colors; however, we have also used plain white cake mix and put in red or green food dye. This is totally up to you.

1 ¼ cup of flour
2 large egg whites
1 ½ cup of sugar
¾ cup hot evaporated milk
¾ cup of butter
¾ cup of shortening
2 teaspoons of vanilla
1 package of Dream Whip (optional)

Decorations for your Gobs:

Colored sugar- any color will do though we use green and red
Edible silver balls
Royal Icing- any color you wish. We use the reds, greens, blacks, and sometimes create our own white icing.

Preheat your oven to 350 degrees. Mix your cake mix according to the directions on the box but add your flour and blend together until your batter is smooth. Using an ungreased cookie sheet and a household teaspoon, spoon your cake mix on to the cookie sheet leaving about 2 inches apart and cook for about 12 minutes or until done. This should yield about 2 dozen sides for your gobs.

While your cakes are in the oven it is time to make your filling. Beat two large egg whites with a mixer on high until your mixture is stiff. Then add your sugar and hot evaporated milk, be sure your milk is hot as this will dissolve your sugar and beat all ingredients together on using a mixer on high. While you are beating add your butter, shortening, vanilla and your package of Dream Whip. You will want to mix the filling until you get a smooth, thick, and creamy filling. Spread your filling between two cakes and you have your Gob. We have even used a little bit of peppermint extract to bring out the flavor of the icing, the possibilities here are endless. Also, if you have food dye use that as well. But you are not done yet.

To decorate your gobs, leave a little filling on the outside border of the gob so you can roll it into your colored sugar. If you are using your red velvet cake mix, you may want to use green sugar. Also, allow the kids to decorate if you want using your royal icing to make trees figures, candy canes, snowmen, gingerbread men, or any other Christmas oriented figure you wish. Use the silver balls to decorate your trees, gingerbread men, or snowmen.

If sending your gobs in a package, then use colored plastic wrap as usually retail stores will have red, green, yellow, and blue wrap. Be sure to wrap your gobs tight enough for no air to get through and send them off. They're sure to be gobbled down!
