Pancakes on a diet? Yes, indeed

When on a diet, it is easy to run out of meal ideas or to long for the delicious treats you had to give up. However, many companies are working on creating healthy alternatives to give dieters more variety in their meal plans. One of them is General Mills, which recently introduced Fiber One Complete Pancake Mix.

I'm not a big fan of pancakes usually, but every once in a while I want them. However, pancakes are a diet no-no, right? Wrong! Thanks to the good folks at General Mills, even dieters can enjoy delicious, healthy pancakes from time to time. Did I say delicious and healthy in the same sentence? I did!

General Mills Fiber One Complete Pancake Mix is made with at least 10g of whole grains per serving, according to the box--one serving is three thick pancakes about four inches across. This serving size supplies you with five grams of fiber, which is 20% of the daily recommended allowance. In addition, three pancakes have six grams of protein. Yes, protein in pancakes! Add some turkey sausage or bacon or egg beaters if you like a little more balance with the carbohydrates.

What about the stuff we do not want in pancakes? Fiber One Complete Pancake Mix has only three and a half grams of fat and no trans fats. The worst part of this mix is that there are 36 grams of carbohydrates--but diet experts will often tell you fiber does not count because you need it and it passes through, so you can subtract it from the total carbohydrates. That means there are really only 31 grams, which while a little high, is not unreasonable. There are only four grams of sugar, so if you use sugar free syrup, that is also a reasonable amount. When my husband made these, he threw some fresh blueberries into the mix for a little extra flavor and fiber.

The question running through your mind might be, how good can whole grain pancakes taste? Unbelievably, these things taste really good. They do have a little bit different texture than normal pancakes, but it is not grainy and tough like some whole grain products I have had. The texture is almost like a light biscuit in cake form.

While Fiber One Complete Pancake Mix should not be a part of a dieter's every day menu, they are great for an occasional treat. I highly recommend them!
