These are the ingredients that you need to have and how they should be prepared prior to cooking.
1 cup of pork rinds crushed up (this is for a topping after you are finished)
2 hard boiled eggs
18 oz of egg noodles
2 cloves of garlic that is chopped up into small pieces
½ cup of a young onion that is chopped into small pieces
1 cup of small shrimp
9 oz of fresh squid (canned is okay too) that is chopped into small pieces
2 cubes of tofu that is cut into small pieces
1 bundle of Chinese celery chopped into small pieces
8 ounces of smoked fish chopped into small pieces
Now that you have all your ingredients ready and prepared, let us go into the actual cooking.
1. Grind the garlic in a pan and saute it in oil. This is for the topping.
2. Next fry up the tofu and then fry up the smoked fish and set it to the side.
3. Then put the 9 oz of squid in a pan and boil it for 5 minutes and set it to the side.
4. Next boil the egg noodles for 10 to 15 minutes or until it is fully cooked.
5. Drain the squid as well as the noodles.
6. Grind the head of the shrimp and then put it in 3 ½ cups of water and drain it into a bowl (we will use this water for later).
These are the ingredients that you need for the sauce of the pancit palabok and how they should be prepared prior to cooking.
½ cup of cornstarch
1 large onion
4 cloves of garlic that is chopped into small pieces
1/3 tsp of salt
1/3 tsp of pepper
2 oz of annatto
Now that you have all your ingredients for the sauce ready and prepared, let us go into the actual cooking.
1. Preheat a pan and set the stove to a medium setting
2. Add some oil to the pan and wait a couple of minutes
3. Add in the chopped garlic to the pan.
4. Saute the garlic and you will know it is finished when it turns a golden brown color.
5. Now add in that water we used for the shrimp. Stir everything and bring it to a boil.
6. In another pan, melt the 2 oz of annatto in the ½ cup of cornstarch and then put it in the first pan with the other ingredients.
7. Add in the 1/3 tsp of salt and 1/3 tsp of pepper.
There you go! It's finished and you can add the sauce as well as the pork rinds to your pancit palabok. Enjoy!
