Fried Lumpia
½ cup chopped pork
1 cup chopped beef
½ cup chopped ham
½ cup boiled potatoes, cubed
2 tomatoes, cut into pieces
1 onion, diced
3 garlic cloves, minced
2 hard boiled eggs, cut in pieces
½ cup water
1 small box raisins
Salt to taste
Lumpin wrappers
Saute the garlic, onion and tomatoes. Add meats, water and salt to taste. Simmer until meat is tender. Add potatoes and raisins. Simmer for 10 minutes and let cool. Then add the boiled eggs. Wrap mixture in lumpia wrapper. Fold ends and cook until golden brown. Servee with garlic, vinegar, salt and pepper.
You can make lumpia several ways. Some people prefer using shrimp and papaya. Some add peanuts or coconut hearts. Others had cabbage and lima beans. It depends on what you like. Put in the stuff that appeals to you and this will be a great treat.
Mechado
1 lbs lean beef
4 onions
½ cup vinegar
Several bacon strips
1 can tomato sauce
6 potatoes cut in half
2 teaspoons butter
1 teaspoon pimenton
Salt to taste
Put bacon slices into beef lengthwise. In a pot place the meat, tomato sauce, vinegar and water to cover. Cover and simmer for about 15-20 minutes. Add tomato, onions, pimenton and cook another 10-15 minutes. Add butter, stir well and serve cutting meat crosswise.
Pork Adobo
1 lbs pork cut into pieces
1 garlic, pounded
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon lard
2 cups water
½ cup vinegar
Put pork in saucepan and add vinegar, garlic, salt, pepper and water. Cover and simmer until meat is tender and most of liquid has evaporated. About 20 minutes. Drain. Add lard and fry until golden brown. You can also do this recipe with chicken pieces if you prefer.
Misu Tomato Soup
2 teaspoon misu (bean curd)
1 teaspoon lard
1 teaspoon minced garlic
¼ onion, sliced
4 tomatoes, sliced
Salt to taste
Saute garlic in lard and then add onions. Add tomatoes and cook another 3 minutes. Add misu and then mash the mixture well. Cook another 3 minutes and serve.
Pancit Guisado
½ cup boiled chopped 1" chicken pieces
½ cup boiled shrimp cut in narrow strips
½ cup boiled pork, cut in strips
½ cup cooked ham, cut in strips
½ cup cabbage, shredded
1 tablespoon toyo
1 tablespoon miki
1 garlic, cut in segments
1 onion, sliced
1 cup shrimp juice
Salt and pepper to taste
Fry garlic, onion, shrimp, pork, chicken and ham. Set aside a small portion for garnish. Add to the rest toyo, shrimp juice, salt and pepper to taste. Simmer for 5 minutes. Add cabbage and mix well. Blanch miki in boiling water for 2 minutes and fry lard. Then add to mixture. Put on a platter and use portion set aside to garnish.
Stuffed Peppers
½ cup shrimp meat, diced
1 cup ground pork
8 medium peppers, green or red
1 teaspoon chopped onion
2 tomatoes, chopped
Salt and pepper to taste
2 eggs, beaten
3 cloves of garlic
Roast pepper and then peel and remove seeds. Saute garlic and add onion, tomato, shrimp, ground meat, salt and pepper to taste. Stuff the mixture into the pepper. Roll the pepper in beaten eggs. Fry in hot oil and serve.
Tinutungan
2 chickens
2 cups diluted coconut milk
2 red and green peppers
Salt and pepper to taste
½ cup pure coconut milk
2 tender bananas
1 piece ginger
1 garlic clove
Cut chicken into piece. Slice bananas and mash with salt and pepper. Saute garlic, ginger, chicken and add diluted coconut milk. When it boils add banana mixture and cook over low heat until chicken is cooked. Add peppers. Add pure coconut milk and cook 5 more minutes. Season with salt and pepper.
Empanaditas
2 cups flour
4 teaspoons baking powder
½ teaspoon salt
1 tablespoon sugar
Cooking oil
2/3 cup milk
Fruit jam
Stir flour, baking powder and salt. Add sugar and sift. Mix 2 tablespoons oil and milk. Make a hole in flour mixture and pour in milk mixture. Mix the two and make a soft dough. Roll on floured board and cut ¼" thick pieces. Pour in fruit jam of choice. Moisten edges with water and fry in cooking oil until brown. These are a fabulous dessert.
Leche Flan
8 egg yolks
1 cup sugar
2 cups milk
Vanilla flavoring
Scald milk in double boiler for 15 minutes. Blend egg yolks with sugar, milk and vanilla. Pour into mold with caramelized sugar. Place in bigger pan half filled with water and bake until mixture is firm. Cool before removing from pan and serving.
Banana Fritters
8 bananas cut lengthwise
1 cup sifted flour
1 teaspoon baking powder
½ teaspoon salt
1/3 cup water
2 tablespoons sugar
4 tablespoons milk
1 egg, beaten
Peel bananas and cut lengthwise. Sift flour, baking powder, salt and sugar. Add milk and water and then egg and mix well. Roll bananas in mixture, coating the bananas evenly. Fry in hot oil until brown. Drain and serve.
