Fiscalini Cheese Company was founded in 1914. The company thrives on the tradition of their Swiss ancestors. The main focus is keeping the cows happy. They do this by letting the cows roam in large open acreage and when raining letting the cows under shelters which are cleaned twice daily. In the hot summers the cows are kept cool by Delta Breezes and misting. Fiscalini's has been recognized for their innovative ideas, milk quality, animal warfare and environmental concerns.
One of the best known cheeses is the San Joaquin Gold. It is named after where it was made in the San Joaquin Valley of central California. . this cheese can be characterized by a firm, granular flesh and toasted nut and butter taste, with a light buttery color to it. Once aged a little longer the color develops a nuttier taster. This cheese has a unique balance of sweet and salty. San Joaquin Gold can be used as a salad topper, melted for cooking, or as a table cheese. It was determined that the best time to release san Joaquin Gold was at 16 months of aging and at 16 months the cheese won a gold medal in London at the World Cheese Awards in 2004, and 2005 and a silver in 2006. Te San Joaquin Gold was also recognized 2 years in a row at the American Cheese Society.
Another award winning cheese is the 18 month aged Cheddar that won the Wyke Farms trophy for best mature Cheddar in the world!!
