Turkey Omelette
Yes, you can have turkey for breakfast. This happens to be a great recipe for those who aren't into eating pork or beef breakfast meats.
Don't be afraid to get creative. Dice the turkey meat into small chunks. In a bowl, combine the eggs, chopped onions, bell pepper, cheese and tomato. Add a splash of carnation milk (this makes the omelette fluffy.) Really, you can use any ingredients you like. Experiment with chopped spinach, broccoli, or other vegetables to give the omelette texture (and add a few extra vitamins.) Fold the diced turkey into the egg and prepare as usual. Yum Yum!
Turkey Quesadillas
This recipe practically makes itself. Substitute the turkey for chicken, and you've got a great treat that will remind no one of Thanksgiving. With just some cheese, cilantro, onions, a few flour tortillas, and a George Foreman grill you can whip this up in seconds flat. Don't forget all the fixings like sour cream and guacamole. This recipe is terrific for a Mexican-themed potluck luncheon.
Turkey Salad
Toss some of that leftover turkey breast into a food processor and chop finely. Mix the turkey with mayonnaise (or low fat whipped dressing) cucumbers, dill, sliced almonds, and a dollop of Dijon mustard for kick. Spread over a bed of fresh greens and nibble as a snack. Also great for a back-to-work/school treat.
Turkey Risotto
Now here is a recipe for the daring. If you really want to impress your family and friends, conjure up a batch of turkey risotto. Risotto recipes can be pretty tricky. But because there are so many variations, you may be able to incorporate other leftovers into this dish.
The ingredients for a typical risotto are Arborio rice, chicken stock (or in this case, turkey stock), onions, butter, lemon juice, Parmesan cheese, salt and pepper. Add frozen peas or other any other vegetables you enjoy. Those who are geniuses with risotto will find this an easy turkey transition to make. But if this particular recipe sounds a little intimidating, try your hand at this pretty easy version.
