As a mother, I often find myself looking for time to complete all of my tasks and still keep the family somewhat happy. This time is nowhere to be found, so I work with what I've got! I prepare lunches and dinners ahead of time and simplify breakfast. Sounds easy because it IS!
If you have just four days a month, you can prepare hard boiled eggs for the week, which will go over well for breakfast. You can also use them in egg salads, chef salads, or just have deviled eggs with your dinner. That is four different meals covered by boiling eggs and water, WOW! Just remember not to overdo it, or remove some of the yolks, which are high in cholesterol.
Breakfast always seems to take a back seat in my home. With two girls, a dog, a cat, and never being on time, breakfast has been left out more times than I would like to admit. Since there is a big age difference between my girls, who are twelve and four, they do not usually like the same breakfast. So, I have healthy choices available for them. There are always hard boiled eggs in my fridge. My four year old loves to peel her own egg and tell everyone she made her own breakfast. Add some fruit and she is good to go! She has just loaded up on protein and fiber and I am a happy mom! My teen would love to have a granola bar or pop tart on the way to the bus stop. Sometimes, she just will not sit down for breakfast and that is what she winds up doing. But I have found that if I scramble an egg with an ounce of cheddar cheese, make it look pretty on a plate with a slice of wheat toast and some fruit, she will stop and eat. Maybe it is just all about the presentation? For me, my favorite go to breakfast is quick oats with blueberries. I get everything I need in one simple bowl. All of these choices take minutes and are healthy and frugal.
Not an egg person? That is ok! There are many other dishes you can prepare ahead of time and eat later. Put together a breakfast casserole for the next day. Or make some granola bars that your family will rave over. Don't forget to add some fruit to make it a well balanced meal.
There are a lot of lunch and dinner dishes that can be prepared ahead of time and then frozen or refrigerated. The important part is learning which ones keep their nutritional values and still taste good after the big freeze. A little research can help you figure this out, and I have already done some for you. You can find a great recipe for oven fried chicken strips here. Make these in bulk and throw some in the freezer. Remember to pack them in an air tight container after wrapping in foil. Slice some Yukon Gold potatoes, blanch in boiling water for five minutes and dry immediately for future fries. Be sure that the potatoes are cool and dry, then wrap in foil and place in an air tight container. Again, prepare a bulk amount. Make eight batches of each, and you have a lunch and dinner every week for a month! Be sure to add a salad or vegetable to complete the meal.
