Freezing Beets

Cook beets 1 1/2 hours or until tender, then put beets in cold water and then peel. The skins will slide right off, run the beet under cold water for a few seconds after the skin is off.

Slice or dice and put in containers or freezer bags. (I like to use Ziplock freezer bags with a double layer-helps prevent freezer burn). Put in freezer.

When you want to have some beets for a meal, take out what you will need and put in kettle add water just to cover. Put a cover on while cooking, they will heat faster. Then drain off the water and add butter and salt and pepper. (I like to just add butter and not the spices)
