Fresh Cucumber Sandwich

Mary Wensing Dvorachek
1 pkg. (cocktail bread) rye squares
1 pkg cream cheese (8 oz) softened
1/4 cup miracle whip
1 pkg. Italian dressing mix (dry)
2-3 cucumbers (slice 1/4 inch thick)
dill weed

Mix cream cheese, miracle whip and Italian dressing mix together until smooth.
Take bread squares and spread mix over the bread. Top with a slice of cucumber (you can either peel the cucumber or leave the peel on, your preference). Top cucumber with dill weed. You can also put a slice of radish on top of the cucumber.

Tastes best when made a day in advance so the flavors can mix.

Serve cold (if you are having a party, put some ice under the bowl to keep chilled)

I love cukes but dislike cream cheese, so I wouldn't like this. But, this would be a fantastic recipe for guests. Thanks much!
