Fresh Garlic Soup

This Creamy Garlic Soup Blends the Flavor of the Garlic with the Smooth Texture of the Bread

Garlic is known for its taste as well as its health benefits. People either love garlic or really don't care for it even if they do understand the health benefits it offers. There are many ways to enjoy fresh garlic. Garlic may be crushed and added to sauces, soups and other recipes, roasted and the paste used as a dip or spread, or minced.

Garlic lovers are always looking for new ways to enjoy this delicious bulb. Fresh garlic is delicious. How about making soup?

Fresh Garlic Soup

6 cloves garlic, crushed

6 T olive oil

Fresh ground black pepper

2 cups stale bread cubes, French, whole wheat or white

6 cups water

1 t salt

4 eggs, beaten

Fresh parsley for garnish

Brown the crushed garlic in the olive oil in a medium skillet. When the garlic is lightly browned remove with a slotted spoon to a small bowl. Brown the bread cubes in the oil in the skillet. Place the oil, bread cubes and garlic in a Dutch oven or soup pot and add water and salt. Cover and simmer for 30 minutes. Add beaten eggs to soup, stir and allow to simmer 5 minutes. Serve in bowls and garnish with snipped, fresh parsley and freshly ground black pepper.

Yield: 6 to 8 servings

Make a meal around this soup by serving a salad first, the soup and then a fruit dessert. The garlic soup is hearty and filling with a creamy taste. The bread you choose to add will determine the texture of the soup.
