Fresh Stawberry Lemon Slushie

You can't beat the flavor of a fresh strawberry! Couple that flavor with the tartness of lemon and you have a great springtime treat!

1 pint fresh strawberries
1 cup lemon juice
1 cup water
1/2 cup sugar

Wash and cap all strawberries. Place in blender or food processor, pour in lemon juice and process until smooth. Line colander with cheese cloth and strain strawberry/lemon juice mixture into a large pticher. In saucepan, bring water to a boil and add sugar. Stir until sugar is dissolved. Combine sugar syrup with strawberry/lemon mixture. Chill for two hours. When ready to serve, pour over ice* in blender and blend for 10 to 15 seconds, until ice is small enough to drink through a straw. Garnish with fresh mint leaves. Yield: 4 (12 oz.) servings.

*You may add a shot of your favorite clear alcohol at this point to amp up this refreshing treat!
