Frijole Negro Guacamole

(Black Beans Guacamole

2 avocados, diced
1 scallion, chopped
1/4 cup chopped tomatoes
1 lime, juiced
2tb. medium picante salsa
1/2 tablespoon chopped cilantro
1 (8-ounce) can black beans, drained and rinsed
Salt and black pepper, to taste
a dash of red pepper
1 small can of sliced black olives
Assorted dippers such as toasted italian bread, whole wheat pita bread triangles or
multi-grain tortilla chips (or for a special treat, try and obtain blue-corn tortilla
chips.

1. Place avocados, scallions and lime juice into a large bowl.
2. Mash avocados to a coarse puree.
3. Stir in tomatoes, cilantro and beans.
4. Season with salt and pepper. Chill for 30-45 minutes, and then serve with dippers.

Stalks of celery and carrots work as well.

3-4 servings

Preparation time: 15 minutes.
