Frozen peas are affordable, easily accessible year around and can be used creatively in recipes to jazz up weekday meals and get an extra serving of vegetables in a daily diet. Here's how -

Pea Soup Recipe Using Frozen Peas

Create a warm, satisfying pot of pea soup by combining one package of frozen peas with one 14 ounce can of chicken broth, four sliced green onions, one cup of water and salt to taste. Heat all ingredients in sauce pan until it reaches a rolling boil, then reduce heat and simmer five minutes. Pour sauce pan contents into blender (may need to do this in batches) and puree with one 6 ounce container of low-fat yogurt. Return pea soup to sauce pan and heat through. Recipe makes four servings of frozen pea soup.

Frozen Pea Pesto Recipe

Make this easy and nutritious frozen pea pesto and toss with favorite cooked pasta for a quick weekday meal. Combine one package of frozen peas, two garlic cloves and two tablespoons of water in a microwave safe bowl. Cover bowl with wax paper and microwave contents on high for four minutes. All peas to cool for five minutes, then transfer mixture to food processor or blender with knife blade attachment. Add two cups of basil leaves, one-half cup of grated Parmesan cheese, two tablespoons of olive oil and salt to taste. Process mixture until desired consistency. Recipes makes about 1 ½ cups of pea pesto.

Beef Curry with Frozen Peas Recipe

Cook one pound of ground beef in skillet, stir on one package of frozen peas, four teaspoons of curry powder, one 14 ounce can of diced tomatoes (drained), ¼ cup of mango chutney and salt to taste. Cook for five minutes then spoon over cooked rice for a quick beef curry dish with frozen peas. Beef curry with frozen peas recipes makes four servings.

Frozen Peas and Creamy Rice Recipe

In a large skillet, combine one package of frozen peas, ½ cup chicken broth and 1/3 cup of half-and-half, heat mixture to boiling. Add one 8 ounce package of pre-cooked white rice and salt to taste, heat to boiling, reduce heat and let simmer for five minutes until most of the liquid has evaporated. Stir in 1/3 cup of grated Parmesan cheese and black pepper to taste. Frozen peas and creamy rice recipe makes six servings.

Minty Mashed Frozen Pea Recipe

Add one teaspoon of olive oil and two chopped shallots to a large skillet and heat for one minute. Stir in two packages of frozen peas and 1/3 cup of water. Cover skillet and cook for eight minutes or until frozen peas are tender. Remove skillet from heat and stir in three tablespoons of chopped fresh mint and salt to taste. Using a hand-held potato masher, coarsely mash pea mixture. Serve in place of mashed potatoes as a side dish.

    I don't like peas (my husband loves them tho). But the curry beef with mango sounds really delicious, even with frozen peas. And pea pesto is interesting indeed; i will make some for hubs, although i don't know if i will try it myself!
