Fruit Salsa Recipes for Spring and Summer

Who does not love salsa? Salsa is a great year round snack and mostly low in calories, especially fresh made salsa. Winter is over and the time for those heavy store-bought salsas has passed. If you want to try something new and different for the summer months, here are some salsas you may not have tasted before. Try them with your favorite meat, or crisp some wheat tortillas in the oven for dipping and you will have a great snack. These are great for pool parties or appetizers for cookouts.

Peach Mint Salsa

Ingredients:

2 ripe peaches

1 sm red pepper
½ red onion
1 sm jalapeno
1/3 cup pineapple juice
2 tablespoon balsamic vinegar
2 tablespoon fresh mint

Peel and dice the peaches. Chop the red pepper, onion, jalapeno, and mint. Combine all ingredients together. Refrigerate with a lid for at least an hour. This salsa can be made a day or two in advance, but don't store too long!

Salsa with Cucumber and Walnuts

Ingredients:

1-¼ cups tomatoes
½ cup cucumbers
2 tablespoon olives
2 tablespoon red onions
1 tablespoon lemon juice
1 teaspoon olive oil
1 teaspoon parsley
¼ teaspoon minced garlic
pinch oregano
¼ cup walnuts

Chop tomatoes, cucumbers, olives and parsley. Chop and lightly toast walnuts. Mix all ingredients except for the walnuts. Refrigerate to blend flavors. Stir in walnuts right before serving.

Kiwi Tangelo Salsa

1 tablespoon vegetable oil
1 small red onion
1 small jalapeno
2 Minneola tangelos
1 kiwifruit
1 tablespoon lime juice

Finely chop the onion. Seed and chop the jalapeno. Peel and seed tangelos and cut into pieces. Peel and dice kiwi.

Heat oil over medium heat in a saucepan. Stir in onion and jalapeno to saute. About two minutes or until slightly translucent. Remove from heat.

Stir in tangelos, kiwi, and lime juice to the onion mixture. Refrigerate in bowl with lid approximately one hour.

Try it with something salty or something sweet like graham crackers!

Blueberry Melon Salsa

2 cups blueberries, fresh or frozen
1 cup honeydew
3 tablespoon. lime juice
1 jalapeno

½ cup red onion
¼ cup cilantro
1 tablespoon peanut oil (or extra virgin olive
1 teaspoon grated lime peel (optional)
1 jalapeno

Salt and pepper

Dice the honeydew and onion. Chop cilantro and jalapeno. Mix all ingredients except salt and pepper. Season with salt and pepper to taste. Let stand at room temperature for one hour, then refrigerate until served.
