Summer is here and the sun is shining. Ice tea is perfect during this time of year because you can make it while sunbathing! I remember when I was little my family would make tea with sunlight. We called it sun tea. Now that I'm a wee older, I've put a spin on our Summer Sun Tea. With a gallon sized pitcher filled with lukewarm water, take about 15 small tea bags and dangle them over the pitcher's edge. You can adjust how many tea bags to your preference depending on how strong you want your tea. Next, cut up some fruit (as much or as little as you feel is right) and let the fruit sit at the bottom of the pitcher. Make sure that juicy areas of the fruit are exposed. Put your pitcher outside where the sun is brightest and hottest. Keep it there for at least an hour or two until the tea has darkened and the fruit essence has dispersed throughout. You may want to stir the tea once or twice while it sits in the sun. When your tea is done, you can press with a spoon the rest of the fruit to make it just a little fruitier. Next, remove the tea bags, but leave the fruit. Pour it over ice and you have Summer Sun Tea! No sugar or sugar substitutes needed! You can try this with any combination of teas and fruits, but I suggest chamomile with oranges and strawberries, green tea with lemon and black berries, black tea with peaches, blueberry tea with blueberries and pears, and peppermint tea with raspberries. Many teas and fruits are packed with antioxidants, so this is a healthy, fun beverage to have all summer long.
