Fun & Easy Spiced Pumpkin Bundt Cake for the Holidays

Feeling festive and love to bake? Here's a neat little cake idea that will impress your friends and family; a great idea for Halloween or Thanksgiving:

Easy Spiced Pumpkin Bundt Cake:

Ingredients:
2 boxes of yellow cake mix
1 can of pumpkin pie filling per bundt pan
3 eggs per bundt pan
2 teaspoons of cinnamon per bundt pan
Food coloring for a nice orange color (optional)

Directions:
Preheat the oven to 350 F. You will need two bundt pans for this to work. Unless you have non-stick bundt pans, you should grease the pans. Mix each of the cake mixes separately and bake in the two bundt pans. Baking time should be around 40-45 minutes depending on the oven. Allow 10 minutes cooling time. When the cakes have cooled, you will need to turn one upside down on the serving tray and the other on top of the first cake to make a pumpkin shape.

You can stop there if you like, or you can frost or glaze the cake. If you choose to frost or glaze the cake, you should try to cover the hole in the bundt cake. You can use a small, round piece of cardboard to cover the hole so you can frost or glaze the cake to make it look more like a pumpkin.

If you choose to pour a glaze over the cake, it is really easy to make at home. All you need is one tablespoon of milk or cream, one cup confectioner's sugar, and half a teaspoon of vanilla. Once again, food coloring is optional, but your cake will look more like a pumpkin if you color it orange. You can use some white frosting and color it green to form a pumpkin stem. Drizzle the glaze over the cake before you put the stem on. Be creative with your glaze designs.

If you choose to frost your cake, you may need several containers of white frosting mixed with some food coloring to completely cover the cake, making sure to cover the cardboard to give the pumpkin a more realistic look. Be creative with your designs. If you want a stem, it should be relatively easy to construct one.

Don't be afraid to experiment with frosting or glazing designs. You can serve it with candy corn on the tray or other festive treats. A great idea for Halloween or Thanksgiving. Good luck and have fun!
