Pastry for 1-crust , 9 inch pie
Lower part:
1/2 cup sugar
1/3 cup cocoa
1/3 cup hot water
1/2 teaspoon vanilla extract
Upper part:
2/3 cup sugar
1/3 cup shortening
1 egg, well beaten
2/3 cup milk
1 teaspoon baking powder
1 cup flour
1 teaspoon vanilla extact
Line 9" pie pan with pastry. Mix sugar, cocoa, hot water and vanilla. Pour mixture into pie pan. Mix sugar with shortening. Beat in egg and milk. Stir in baking powder, flour and vanilla. Beat until smooth. Spoon batter over cocoa mixture, spreading with a knife until top is covered and sides of the pan are sealed. Bake at 350 degrees for 40 minutes or until top springs back when lightly touched. Makes 8 servings.
