Getting Creative in the Kitchen with Atkins Diet Recipes

If low-carb has got you thinking low-fun, take a little artistic license in the kitchen and dump the low-carb blues down the disposal. If you've been on a low-carb diet for a while and are feeling a little frustrated about the lack of variety in recipes, there is a simple solution. You just need to get creative! First of all, it's important to remember that Atikins Diet recipes and other low-carb foods aren't just solely about using protein and high-fat foods like meats, cheese, and eggs. In fact, most low-carb diets aren't about completely eliminating carbohydrates at all but are more about keeping them down to a minimal part of your diet. Remember: Minimize, don't eliminate! So put on your apron as well as your thinking cap and get ready to add some invigorating twists to your tired recipes.

Crust Buster

Let's face it, there are quite a bit of foods out there like hamburgers and tacos that are low-carb friendly on the inside but are unfortunately contained in an unfriendly and unhealthy high-carb shell. There is hope! You might recall a few Atkins Diet Recipes that use lettuce leafs as a healthy and tasty alternative to hold all of your good eats easily. But don't just settle on iceberg lettuce (remember, we're getting creative here!). Romaine lettuce is an absolutely great alternative to carb-loaded breads. Pour this tasty mixture in a greased muffin pan (the larger Texas-sized "6-pack" pans work best) and bake at 375 degrees for 20 minutes or until done. Now you've got an absolutely nutritious breakfast treat to start the day. You can also freeze them and grab one to heat up at work while you're running out the door!

Destination Dessert

Some of the best Atkins Diet Recipes have to be the desserts. Sure, you have to minimize or substitute sugars, but low-carb desserts are rich, delicious, and totally satisfying. Take chocolate for example; as long as the Cocoa is around 75-85%, you've still got a very low-carb star ingredient that will steal the show. Take a classic custard recipe of six egg yolks, 1 quart of heavy cream, ¼ cup of sugar substitute, and a pinch of salt. Stir over medium-low heat until it coats a spoon but don't let it boil. In a double-boiler, melt a bar (or around ½ cup) of your favorite low-carb chocolate, add it to the custard and mix thoroughly and you've got one of the most delectable desserts in your Atkins diet arsenal. Take it a step further and freeze the custard in Popsicle molds for a cool summer treat that you may end up making any day of the year.

Cooking is an art and good artists know that to keep things interesting it takes experimentation and thinking differently. By experimenting with your Atkins Diet Recipes, you can keep your low-carb diet fun, interesting, and most importantly, on-going! Beat the boredom of strictly thinking, "meat, cheese, and eggs," by trying new things and keeping it creative and you're sure to have meals that will keep you moving forward and have you looking forward to eating again.
