Eating fresh fruits, vegetables, legumes, seeds, nuts, whole grains, and seaweed is the first step in beginning a raw food diet or raw vegan diet. Most people who are eating raw foods swear by the diet, saying the benefits are many. Raw food dieters profess a rise in their energy levels, fewer digestive problems, improved complexion, not to mention, rapid weight loss.

Cooking food is said to diminish the enzymes which help digest food and absorb nutrients. To truly be following a raw food diet, ¾ of the food eaten must be raw. The raw food diet contains less saturated fat and trans fat than a typical diet of cooked meats and vegetables. Raw foods are naturally low in sodium which is beneficial for keeping blood pressure at a normal level. It is also high in fiber, which helps digestion and keeps hunger at bay longer. Other minerals in raw foods are potassium, folate, and magnesium.

Foods to Eat on the Raw Food Diet:

  • Fresh vegetables
  • Fresh fruit
  • Whole grains
  • Seeds
  • Legumes
  • Seaweed
  • Nuts
  • Unprocessed foods
  • Coconut milk
  • Bottled water

Methods to Vary the Raw Food Diet:

  • Puree vegetables and fruits
  • Dehydrate foods
  • Chop nuts and seeds for toppings
  • Blend fruits for juice

Here is a simple, tasty raw food diet recipe that will liven up the diet.

Apple Salsa

- 2 apples, diced
- 4 TBS. lime juice
- 1 TBS fresh, minded ginger root
- Salt and pepper, to taste

Combine all ingredients together an hour before serving. That's all there is to it. Enjoy it by itself, or use on top of other fruits and vegetables.

Many people find that this diet causes detoxification after following it for a few days. It can also cause a nauseous feeling and slight headaches until the body becomes accustomed to a diet without caffeine, fats, sugar, and meat.

Always check with your doctor before beginning a diet, especially a diet as different as the raw food diet. Your doctor can suggest vitamin and mineral supplements that should be taken with this diet, since it is low in iron, calcium, and B-12.
