Gluten Free Wheat Free Celiac Disease Italian Veggie Stove Top Pizza Recipe

This fun recipe is not only wheat free, gluten free and Vegetarian, it is healthy and delicious. You won't need to make your house hot with the oven either because it simply cooks on the stove top in a large skillet! Artichoke hearts, black olives, diced tomatoes and seasoning firm up this fabulous gluten free pizza. If you are gluose intolerant or eat a wheat free diet or gluten free diet, give this recipe a try for a change of pace meal the whole family can enjoy.

Ingredients for crust:

1/2 cup cornstarch
1/2 cup rice flour
2/3 cup evaporated milk or rice milk
2 large eggs
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper

Ingredients for pizza topping:

1 can diced tomatoes

6 fresh basil leaves, minced

1 (6 ounce) jar of marinated artichoke hearts, rinsed and drained, then diced

1 cup fresh mushrooms, sliced thin

1/2 cup black olives sliced

How to Make the crust:

Gently mix all crust ingredients until blended smooth. In 10 inch skillet over medium high heat drizzle 1 tablespoon olive oil.Pour the batter into the frying pan like a crepe. When crust begins to firm up gently flip it over and then top with piza toppings evenly distributed. Lower heat and place lid over pan so ingredients melt right into crust. be careful not to burn the pizza. When ingredients are hot remove frying pan from stove and gently slide the gluten free pizza on to serving plate or just cut and serve directly from the frying pan.

This recipe makes 4 hearty servings

Use medium-low heat, cook until set, do not brown. Use a 6 pan for kids size.
