Here is an easy and delicious gluten free sandwich bread recipe that can easily be doubled for holidays.

Gluten Free Sandwich Bread Recipe

Preheat oven to 350 degrees.

Ingredients:

6 eggs, lightly beaten
Enough water added to beaten eggs to equal 1 ¾ total liquid
1/2 cup extra virgin olive oil
7 tablespoons lemon juice
2 cups milk

In a separate bowl, add these dry ingredients, and sift if necessary:

1 1/4 cups rice flour
1 1/4 cups garbanzo bean flour
1 1/2 cups sorghum flour
2/3 cup potato starch
2/3 cup tapioca starch
1 tablespoon baking powder
1 tablespoon baking soda
3 tablespoons guar gum

Directions:

Combine all of the wet ingredients in one large bowl and mix well. Let the wet ingredients sit while you mix together the dry ingredients. The lemon juice is intended to sour the milk as it sits while you continue to mix the dry ingredients.

Combine the dry ingredients and mix well. After the dry ingredients are mixed together well, add the dry ingredients to the large bowl of the wet ingredients. Don't over mix the batter. You want it to be the consistency of regular cake batter.

Pour the mixture into a greased and rice floured pan with a cover or aluminum foil over the pan. Bake at 350 for one hour, then turn off the oven and let site for another 15 minutes, allowing the heat from the oven to finish the bread. Remove from the oven and allow the bread to cool for a few minutes, then remove it from the pan, let cool more, and slice.
