I have compiled a list of gluten free recipes for all of you who are allergic to wheat or have Celiac Disease and for the rest of you too for you to try. I'm here to tell you that they are nummy in your tummy if you follow the directions. Unlike regular recipes, you can't improvise with ingredients and only then when you have a solid grasp on the Gluten Free foods. Enjoy!

This first recipe for burgers I love since I miss eating the real deal. Even before going on this lifestyle change, I would not eat red meat so this is a fantastic alternative.

Broiled Black Bean Burgers

2tsp.EVOO

¾ C. diced yellow onion

2 C. finely chopped white button mushrooms

2 cloves garlic, minced

¼ tsp. cumin

1C. cooked black beans

¼ C. chopped fresh cilantro

1 ¾ C. sprouted-grain breadcrumbs

¼ tsp. sea salt

¼ tsp black pepper

Preheat broiler on high.

Heat large skillet over medium heat. When hot, add EVOO. Add onions and cook, stirring often.

Add mushrooms, garlic, and cumin. Cook, all the while stirring until liquid is released from mushrooms.

In food processor, combine mushroom mixture, black beans, and cilantro. Process on high speed. Stop to scrape sides as necessary.

In large bowl, combine black bean mixture, breadcrumbs, sea salt, and black pepper. Stir to mix. Shape into 4 patties.

Place patties on broiler. Broil 6 inches from heating element until browned. Turn patties over until brown and crisp. Serve with flourless buns or by itself.

Fresh Made Mayo

2 large egg yolks

½ C. EVOO

2 TB. Red wine vinegar

Sea salt

Black pepper

Place egg yolks in blender. Blend on lowest speed for 20. Very slowly while still blending add the EVOO. Stop blender, mixture shall be creamy.

Add sea salt and pepper to mix. Pour in 1 TB red wine vinegar. Continue to blend for 5.

Pour homemade mayo into a container, Whisk in remaining vinegar to taste. Can refrigerate for up to 5 days.

Zucchini Fries

1 large zucchini

3 TB stone ground yellow cornmeal

3 TB stone ground brown rice

4 1.2 TB water

Preheat oven to 400F with rack in highest position.

Trim ends from Zucchini and discard. Cut in half, and cut those halves into matchsticks.

In dish, combine yellow cornmeal and rice, mix. Add just enough water to create a thick paste. Dredge matchsticks in mixture coating lightly. Single layer on baking pan coated with spray.

Bake for 10 min. Turn fries and bake for another 10 min. Serve with the black bean burgers and homemade mayo and fresh vegetables.
