The Yummiest/Gluten free Waffles!
1 cup of brown rice flour
3/4 cup of rice milk
1 egg
2 tbs safflower oil - or any other vegetable oil you want.
2 tbs of plain yogurt
1 tbs vanilla extract - can be adjusted to taste
2 tbs grade A maple syrup - we're not talking about Mrs. Butterworths here.
Combine all ingredients together in a bowl. The consistency of the batter should not be too soupy or thick. Gradually add the milk until the consistency is just right. I prefer to add pecans or walnuts into the waffle mix. However, you can add whatever you like such as blueberries or bananas. The recipe is very versatile.
Add the amount batter to your waffle iron as specified in its manual. I use a large Belgium waffle maker, so this recipe makes on large Belgium waffle.
I also prefer to pour on grade A maple syrup. It's natural and has no added sugar. It also tastes lighter.
These waffles are little heartier and denser than you average, which makes them especially unique and tasty in my opinion. This recipe is great whether you're looking for a healthier alternative or just want a great tasting waffle!
