Gluten-Free Garlic Fries

With Gluten-free Ranch-style Dressing (or Dip)!

Because of the various diseases that run in our families, developing a sensitivity to gluten isn't far-fetched for my husband, son, and I. For this reason, I have taken to looking for recipes that are more health conscious than most. Recently, I found a long list of recipes at recipezaar.com that are specifically gluten-free recipes. One of my new favorites is gluten-free garlic fries, which goes really well with my recipe for gluten-free ranch-style dressing! I'm sure you'll love these recipes as well:

Gluten-Free Garlic Fries:

Ingredients you'll need:

1 gallon peanut oil or canola oil
2 lbs russet potatoes
3 tbsp chopped fresh garlic
2 tsp seasoning salt*

Directions:

[1] Make the seasoning salt*
[2] Heat oil in home-style fryer (or in 1 ½ gallon stockpot to 360F)
[3] Cut the peeled/washed potatoes into strips 3/8" long
[4] Put raw fries into strainer and immerse in oil for one minute
[5] Remove and let drain
[6] Immerse fries and strainer into oil for another 90 seconds
[7] Remove and let drain
[8] Immerse fries and strainer into oil for another 45 seconds
[9] In mixing bowl, combine the chopped garlic, seasoning salt, and small amount of oil. Add the cooked fries and toss together.

*to make the seasoning salt, combine all of the following ingredients and mix well (can be stored for several months):

¼ cup kosher salt
1 tbsp ground black pepper
1 tbsp minced garlic
1 tsp rubbed sage
1 tsp dried thyme
1 dash ground nutmeg

Gluten-Free Ranch-Style Dressing

Ingredients you'll need:

2 tsp salt
2 tsp instant minced garlic
3 tbsp dried onion flakes (I actually use onion salt in place of the salt and onion flakes)
2 tsp fresh ground pepper (non-fresh works just fine, too)
2 tsp sugar (I use Equal)
2 ½ tsp paprika
2 ½ tsp dried parsley flakes

Directions:

(Combine ingredients and blend well... store in an airtight container and save)

~ To make the dressing, blend 1 tbsp of the mix with 1 cup of mayo and 1 cup of buttermilk.
~ To make a dip, blend 1 tbsp of the mix with 1 cup of sour cream; refrigerate 1 hr before serving.
