Hidden Eyes Parfaits

Looking for a special Halloween treat for those who need to remain gluten-free? Here is your answer: a treat so delicious it will scare you! Prepare the following recipes and then assemble the parfaits in this order: layer of chocolate pudding, layer of butterscotch pudding, layer of buckeyes, top with a layer of chocolate pudding. Beautiful, delicious, and gluten-free! P.S. You don't have to need gluten-free to enjoy this recipe.

Butterscotch Pudding Recipe

Ingredient list:

1 teaspoon of pure vanilla extract

1/2 teaspoon of salt

3 cups of whole milk

3 Tablespoons of butter

4 1/2 Tablespoons of cornstarch

1 cup of brown sugar

Directions:
Pour the milk into a medium pot. Over medium heat bring the milk to almost boiling. Meanwhile mix the brown sugar, corn starch, and salt into a bowl. Slowly stir half of the scalded milk into the dry ingredients. Reduce heat to low and combine the sugar mixture with the remaining milk in the pot and cook over low heat until it starts to thicken. Remove from heat and add butter and vanilla, stirring until combined. Place into the refrigerator to cool.

Chocolate Pudding Recipe

Ingredient list:

1 cup of cornstarch

1 cup of sugar

1/4 teaspoon of salt

1 ½ cups of whole milk

1 bag of semi-sweet chocolate chips

1 teaspoon of pure vanilla extract

4 Tablespoons of softened butter

Directions:
In a large pot, over low heat, melt chocolate chips and sugar into the milk, stirring continuously, until smooth. Once the chocolate is melted, bring the mixture to a quick boil and then slowly add the corn starch, continuing to stir constantly. Once mixture is slightly thickened (about 2-3 minutes) remove from heat, add softened butter and vanilla while continuing to stir for an additional minute or until the butter is completely melted and incorporated.

Buck-eyes (gluten-free)

Ingredient list:

½ cup melted butter

1 bag gluten-free animal crackers, finely crushed

2 cups powdered sugar

2 cups peanut butter (creamy or crunchy)

1 bag semi-sweet chocolate chips

Directions:
Mix the first four ingredients, combining well. Use your hands to mix thoroughly. Roll into balls and place onto a cookie sheet. Refrigerate for 2 hours or until firm to the touch. Melt chocolate chips in the microwave at 30 second intervals. Dip into the melted semi-sweet chocolate and then place on waxed paper to cool. For the parfaits, make sure to create smaller balls than usual.
