Good Fortune Cookies

Fortune Cookie Recipe

Ingredients

¼ Cup All-Purpose Flour

2 Tbsp Sugar

1 Tbsp Cornstarch

Dash salt

2 Tbsp Cooking Oil

1 Egg White

1 Tbsp Water

½ Tsp Vanilla

Directions

  1. Before making the cookies, write fortunes on strips of paper ½ inch wide and about 6 inches long. You can also write wise sayings or even wisecracks depending on the occasion.
  2. In a small mixing bowl stir together flour, sugar, cornstarch, and salt.
  3. Add cooking oil and egg white, and stir until the mixture is smooth
  4. Add water and vanilla. Stir well.
  5. Lightly grease a skillet or griddle with cooking oil.
  6. Make one cookie at a time. For each cookie, pour 1 tbsp of the batter in the skillet or griddle and spread to a 4-inch circle.
  7. Cook over medium-low heat for about 4 minutes or until light brown.
  8. Turn with wide pancake turner and cook 15 seconds more.
  9. Work quickly to follow the finishing directions!

Finishing Directions

  1. When the cookie is done on both sides, use a wide pancake turner to lift it out of the skillet and onto a clean potholder.
  2. Working quickly while the cookie is still soft, put a fortune in the middle and fold the cookie gently in half.
  3. Bend the folded side in half over the edge of a bowl. Gently pull on the ends so endges of the cookie come together. You'll recognize the shape!
  4. Put cookie in a muffin pan (this will hold its shape) to cool.

This recipe makes 8 Good Fortune Cookies.
