Thanksgiving Leftovers Easy Recipe #1 - Turn your left over meats into Quiche

Ham and turkey can be used with leftover vegetable tray items to make a crustless quiche. This Thanksgiving makeover can be made in a 9X13 baking dish or in muffin tins and frozen for use as lunch meals.

Thanksgiving Leftovers Crustless Quiche

1 Dozen eggs

2 cups heavy/light cream or half & half (or combo thereof)

2 cups shredded cheese (cheddar, swiss, mozzarella, monterey jack)

1 to 2 cups of cooked turkey or ham(Thanksgiving leftover meats)

chopped onion to taste (optional)

broccoli or other cooked veggie (Thanksgiving leftover from the veggie tray)

Steam the left over veggies. Whip up the eggs and cream. Fold in other ingredients. Spray pan with non stick spray. Pour in a 9x13 inch pan or into 12 muffin tins. Cook at 350 for 35 minutes.. Let cool before cutting.

Thanksgiving Leftovers Easy Recipe #2 -Leftover Turkey Stuffing Casserole

Use your left over turkey and stuffing to make a casserole. You can prepare this dish, bake, and then freeze for use later on.

Turkey and Stuffing Casserole

4 cups Thanksgiving leftover stuffing, cube up

2 cups Chopped turkey

2 cups left over gravy or 1 large can Cream of chicken soup

Butter or spray a casserole dish. Put half of the cubed stuffing in the dish. Layer half of the turkey over the stuffing. Cover with half of the gravy or soup. Add another layer of each. Bake at 350 for 20 to 30 minutes.

Thanksgiving Leftovers Easy Recipe #3 - Hash brown Casserole Soup

For a great winter day Thanksgiving Makeover, use your Thanksgiving leftover Hash brown Casserole to make Potato Chowder.

Turn 1 ½ cups of left over hash brown casserole into a Thanksgiving makeover meal of a potato soup. You will need a can of chicken broth, a 12 ounce can of evaporated milk, and some cubed Velveeta type cheese. Heat the broth, milk and chopped up casserole until the pieces of potato are thoroughly mixed with the liquid. Once heated through, add the cheese and melt complete. When melting cheese, do so over lower heat so you do not scorch the soup.

    I am always looking for ways to use that leftover turkey. I like to freeze packets for later use in casseroles, etc. You are making me hungry! I will add these recipes to my collection of "leftover turkey" ideas. :)
