Pork Goulash

Ingredients:

1 1/2 pounds lean pork
1 medium onion, diced
1/2 green pepper, diced
2 tablespoons lard
1/2 cup tomato juice
2 tablespoons all-purpose flour
1/4 cup water
2 tablespoons paprika
Salt and pepper to taste

Procedure:

1. Cut pork into 1 1/2 inch cubes.
2. Saute onion and pepper in lard until soft.
3. Add pork, tomato juice, salt, and paprika.
4. Cover and simmer for 1 hour, adding more water gradually.
5. Stir from time to time
6. Make a paste of flour and water; gradually add some juice from goulash, stirring constantly.
7. Return to pot and cook until thickened.

Makes 4 to 5 servings...

Ground-Beef Goulash

Ingredients:

2 tablespoons butter
2 cups thinly sliced onion
2 pounds ground beef
1 tablespoon paprika
salt to taste
1 green pepper, cut in strips
1/2 cup canned tomato sauce
2 beef cubes
1 cup water
3 medium potatoes, diced and cooked
1/2 cup dairy sour cream

Procedure:

1. Melt butter in large heavy pan.
2. Add onion and cook for 10 minutes.
3. Add meat, paprika and 1 teaspoon salt and cook.
4. add green pepper, tomato sauce, beef cubes and water.
5. Cover and simmer about 20 minutes.
6. Add potatoes and heat.
7. Stir in sour cream.
8. Add more salt and sugar if necessary.

Makes 6 servings...

    I'll have to try the ground beef recipe...I always loved goulosh but never attempted cooking it myself..
