Sweet Potato Salad.....MMM! Delicious!

SWEET POTATO SALAD…Another gourmet fast food recipe from Chef Michael Christopher
Cooking time: 10-15 minutes Serves 6

This is a great little recipe perfect for the barbecue, picnicking or just as a very flavorful side dish. It goes great with hot or cold meals.

Ingredients:
3-4 med sized sweet potatoes
2 diced celery stalks
2 hard boiled eggs
½ cup diced sweet Vidalia onions
½ cup sweet honey mustard
1 tsp paprika
2 tbsp honey
2 tbsp butter

Place 2 large eggs in small sauce pot with water and boil on stove for 10 minutes
While eggs are cooking chop sweet potatoes into large pieces, (peeled or unpeeled) and place them in plastic bag along with butter. Place plastic bag containing sweet potatoes in microwave oven and microwave on high for 5-10 minutes or until soft. When potatoes are done place them in large salad bowl and mash to consistency of lumpy mashed potatoes. Next add celery, onion, honey and honey mustard and stir until well mixed. When eggs are done run them under cold water to cool them off and then peel them.
Once eggs are peeled slice them and line the sides and top of salad with them. Sprinkle the paprika over the tops of the salad and eggs. Place salad in refrigerator, (or freezer but do not freeze) until chilled. Serve cold.
