Grandma's Potato Casserole

1 ½# hash brown potatoes
1 can mushroom soup
1 ½ c. shredded cheese
1 c. sour cream
1 onion (chopped)
2 T. butter
½ t. black pepper
1 t. seasoning salt

Sauté onion in butter. Stir all ingredients together in a large mixing bowl. Then, place mixture in greased baking dish. Cover and bake for 1 hour at 350 degrees.

Optional Additions:

This casserole can be made into a main dish by adding 2 to 2 ½ c. of finely diced ham chunks.

Sprinkle crushed corn flakes or toasted bread crumbs over potatoes 15 minutes before casserole is finished baking. Do not replace lid on baking dish if you choose to add toppings.

You can also put this dish together and freeze for use at a later date. The mixture should be completely thawed before placing in the oven to bake.
