Cool delicious melons, greens, feta cheese with a light oil and vinegar dressing make this salad ideal as either a dinner salad or a meal in itself

Ingredients

Serves 4
1 cup Cantaloupe Chunks - small cubes
1 cup Honey Dew Melon Chunks - small cubes
1 cup Seedless Watermelon Chunks - small cubes
8 oz Feta Cheese - crumbled
2 cups Fresh Spinach Leaves
2 cups Romaine Lettuce Leaves - cut in 1" slices
1/4 cup Extra Virgin Olive Oil
1/4 cup White Wine Vinegar
2 tbsp Black Pepper - Freshly ground (coarse)
1 tsp Sea Salt - To taste or about 1 Tsp
1 tbsp Dried Oregano
2 tbsp Garlic Powder

Directions for Greek Melon and Feta Salad

Prepare Dressing
Mix oil, vinegar, salt, pepper, garlic powder and oregano in a small bowl

Prepare Greens
Clean and dry spinach and cut romaine lettuce leaves. Mix in large salad bowl. Lightly salt and pepper to taste.

Combine Melons, Feta Cheese and Greens
Gently add the cantaloupe, honey dew melon and water melon chunks to the greens. Add crumbled feta cheese and mix lightly.

Toss with Dressing
Add dressing to melon, cheese and greens. Toss light lightly.

Chill and Serve
Add black greek olives if you like and enjoy!
