The Famous Salad as it is Actually Made in Greece

Many people are familiar with the Greek Salad that is served in Greek restaurants in the United States. However, this not really the way that a Greek Salad is made in Greece. In Greece it is known as Horiatiki or "Village" salad. It is very simple.

Ingredients:

1 large tomato

1 large cucumber

1 medium onion-red is better

1 green pepper

Black olives with pits still in

1tbsp. oregano

1 lemon (optional)

Olive oil

Feta cheese

Salt and pepper to taste

Execution:

Cut the tomato and cucumber into cubes, essentially bite-sized chunks. Chop up the onion and pepper into strips. These vegetables should not be diced. Strips is fine. Throw in the olives. Squeeze the juice of one lemon (optional) onto the salad. Pour olive oil generously onto the salad, but don't drown it in olive oil. Add salt and pepper and oregano and toss. Take an approximately 4oz. block of feta and place it on top of the salad, in the center. Drizzle a little more olive oil on top of the feta and add a pinch of oregano. You can also add some hot peppers to the salad if you like. Serve family style.
