Green Angel Food Cake Recipe for St. Patrick's Day Celebrations

After the corned beef, scones, and cabbage what could be better than a slice of angel food cake for dessert. That's green angel food cake. Making the cake is easy, and the raves will be plentiful.

Green Angel Food Cake

Ingredients:

1 box angel food cake mix

2 boxes lime gelatin (2 oz size)

1 cup boiling water

1 container of Cool Whip (9 oz size)

Lime slices (optional)

Directions:

Prepare the angel food cake mix as directed on the package. Spoon about 1/3 of the batter into a small bowl, and fold in the lime gelatin powder.

Alternately spoon the batters into an ungreased 10-inch tube pan. Use a spatula (or butter knife) to zigzag through the batters to get a marbelized effect. Do not mix until the colors blend together.

Place the pan of batter on the lowest oven rack and bake at 375 degrees F. for 40-45 minutes. Cake should have a golden color on top.

Remove from oven and turn pan upside down over a glass bottle or tall funnel. Let the cake cool.

Fluffy Lime Icing

While the cake is cooling, mix up the icing by combining

1 box lime gelatin (2 oz size)

1 cup boiling water, and chill until beginning to set (about 1 hour).

Then, combine 1 container of Cool Whip (9 oz) and the slightly thickened lime gelatin.

Remove the cake from the pan, and cover with the icing. Top with lime slices (if desired). Keep cake refrigerated.
