Green Bean Heaven - My Thanksgiving Green Bean Casserole Recipe

My family favorite green bean casserole is also Weight Watcher friendly. You will begin with a little olive oil in a pan. Add onions and fresh sliced mushrooms to your oil. Saute these veggies up on medium heat. Once thoroughly cooked to your taste, add a few slices of Canadian bacon that you have sliced into small squares. Let this heat thoroughly through. Once this is heated nicely add one can of drained Kitchen Sliced Green Beans. The final touch will be adding one wedge of Laughing Cow Swiss Cheese. As this doesn't melt nicely, you will need to help this along with the warmed veggies in the pan. It will not melt smoothly but will eventually cream around the bottom. Keep the pan on low heat until it is the desired consistency. In order to make enough for a family of four or more, you will need to triple this recipe and possibly even more.

One week in my Weight Watchers program I utilized this recipe as a side dish to my main course. It has lots of protein and vegetable content to keep you full for quite a while. I lost at least 4 pounds that week by staying full and healthy with this dish. I also used the recipe for our family Thanksgiving side dish and my entire family loved it. It's lighter than the traditional Green Bean casserole but is still in the same category.

Another addition that I have used with this casserole is red peppers, zucchini, and squash. I will add the peppers in at the beginning to make them soft and sweet with the onions and mushrooms. This is also the time to flavor these fresh vegetables with salt and pepper as needed. Once heated thoroughly I will add the drained green beans. The squash and zucchini will cook up nicely with the onion and mushrooms and add color to your dish.

For the Weight Watcher program, this dish is very light on points. Each wedge of Laughing Cow cheese is one point. The green beans are essentially zero points and you will need to calculate the points for the Canadian bacon slices. As a good source of protein and fiber, this dish will keep you full and satisfied while keeping you on track with your weight loss program.

At a Weight Watcher meeting, I was able to share this recipe with the group and many members commented on how much their families and friends enjoyed it. They have also continued to use it in other meals as well. It can be cooked and then added to a crock pot to allow for easy travel as well.
