1/3 lb Green Beans, Chinese Long Beans
2 slices Prosciutto di Parma, sliced paper thin and cut in half
1 pinch Sea Salt, more as desired
1 pinch Black Pepper, freshly ground, more as desired
1 tsp Extra Virgin Olive Oil

Steam the green beans until al dente. Let cool approximate 3-5 minutes or until cool enough to handle.2
Place 10 green beans each in 4 stacks. Sprinkle lightly with sea salt and freshly ground pepper.3
Roll prosciutto around the middle of each stack.4
Heat a skillet over medium high heat. Add olive oil to evenly coat the bottom of the skillet.5
Place the wraps in the skillet seam-side down. Cook until browned on all sides.6
Plate and garnish with sprigs of of parsley. Serve.Tip
Chinese long beans can be substituted with French green beans (haricot vert). The green beans must be long and thin to wrap in bundles properly. Fresh green beans are better, but frozen ones are acceptable.Prosciutto di Parma is cured ham from Italy has a texture between lean bacon and ham. It is important that it is sliced paper thin. It can be found in most large grocery stores in the deli.
