Green Eggs and Ham Recipe for St. Patrick's Day

You will need:

2 large eggs

½ teaspoon green food coloring

¼ teaspoon of salt

¼ teaspoon black pepper

½ lb of Smithfield brown sugar ham (boneless)

¼ cup mixture of diced green peppers and diced onions

Lightly brown the ham in a small skillet on the stovetop. Drain excess grease.

In a small mixing bowl, combine eggs, salt, and pepper. Beat the eggs lightly.

Sautee onions and green pepper in a small non-stick skillet. Drain excess oil and return the skillet to the stove, then add the egg mixture to the sautéed onions and green pepper. Scramble the eggs as they fry. Add food coloring to the eggs and serve them with the ham. Makes enough for one person. Multiply ingredients times the number of people served.

You'll need:

½ of a medium-sized papaya.

1 can of evaporated Pet milk

½ cup sugar

1 cup of ice cubes

Remove the papaya skin and cut the papaya into small chunks. Combine all ingredients in a blender and blend. Makes about three tall glasses, enough for 2-3 people.
