You know how you are bombarded with green tomatoes at the end of the season? Well here is a great recipe for you to make so you can freeze or give to friends.
Ingredients:
1 1/2 Cups all purpose flour
1 tsp. salt
1/2 tsp. baking soda
3 eggs, beaten
1 cup of sugar
1 cup grated green tomato, that has been drained
1 cup vegetable or canola oil
1 1/2 tsp. vanilla
1 cup chopped pecans or walnuts
1 cup of raisins
(I sprinkle top with cinnamon and sugar when cooled)
Grease a 9x5x3 inch loaf pan.
Combine the first 3 ingredients. In seperate bowl, beat the eggs, sugar, tomato, oil and vanilla. Then add the tomato mixture to the first 3 ingredients' bowl. Toss. Fold in the moist ingredients until moistened. Fold in pecans and raisins. Spoon batter into the greased pan.
Bake at 350 degrees for 1 hour or until knife comes out clean. Cool n pan. Remove from pan in about 10 minutes. Completely cool before wrapping in foil to freeze or slice.
1 loaf = 10 servings.
