Green Tomato Pie

My 90-year-old uncle recently gave me all his late wife's cook books. One of them is a collection of recipes cut out and glued into a notebook that apparently belonged to an electrical contractor or some such. It's an interesting book, containing a lot of interesting recipes.

Tonight I discovered a recipe for Green Tomato Pie. I would like to say that it's deliciously different, but unfortunately, I don't have any spare green tomatoes so I can try the recipe. If you shudder at the idea of sweet tomatoes, I will say that my mother-in-law used to make Tomato Preserves which were sweet and actually quite good. Tomatoes are, after all, a fruit. Right?

So for any brave soul with green tomatoes to spare, here's your chance to try something new. If you try it, will you please get back to me and let me know how it is?

Green Tomato Pie

Green tomatoes

2 teaspoons lemon flavoring

1 cup sugar

2 Tablespoons Minute Tapioca

Double-crust pie pastry

Wash green tomatoes completely. Slice or chop coarsely.

Put tomatoes, sugar, flavoring, and tapioca into a regular-sized pie tin or plate lined with pie pastry.

Cover with second pie pastry.

Bake in 400-degree overn for 15 minutes, then lower heat to 325 degrees and continue baking for 45 minutes.
