Grilled Buffalo Chicken Pizza

1 Store-Bought Pizza Dough (thawed if frozen)

Extra Virgin Olive Oil

Wing Sauce (store-bought is fine)

1 package Shredded Low Fat/Light Mozzarella

1 package Pre-Cooked Shredded Chicken or Strips

1 container Blue Cheese Crumbles

1-2 stalks Celery, sliced

Prepare your grill as usual. Divide dough into two halves. On lightly floured work surface, work dough into two rounds, about 6-8" in diameter. Lightly brush one side of each round with olive oil and place oil side down onto grill. Lightly brush tops of dough rounds with olive oil. Grill until undersides are golden, about 3-4 minutes. Flip crusts over and, using a large spoon, spread wing sauce over rounds to within about half an inch from the edge. Next, sprinkle a thin layer of cheese. Top with chicken, celery and blue cheese crumbles. Close grill lid for a minute or so to help melt cheeses, being careful not to burn crusts. Remove pizzas to serving platters, slice and serve.
