Serves 1
2 slices Whole Wheat -100% Whole Grain Bread
4 slices Low Fat Swiss Cheese
4 slices Tomato (medium)- sliced thinly
4 slices Avocado - sliced thinly
1 leaf Boston or Romaine Lettuce
1 oz Alfalfa Sprouts
1 oz Carrots - shredded
1 tsp Ranch Dressing - Fat Free
2 tsp Smart Balance Margarine - or similar spread high in Omega 3 with 0gTrans Fat
To Taste Pepper and Garlic Powder
1 tbsp Dijon Mustard

Directions for Grilled Cheese Sandwich - Spa Style

Build Bottom Side of Sandwich
Thinly spread dijon mustard on bottom inside slice of 100% whole-wheat bread. Apply 2 slices of low fat swiss cheese. Spread 1/2 the low fat ranch dressing on the cheese. Layer 4 tomato slices followed by 4 avocado slices, the sprouts, the carrots and finally the lettuce.

Build Top Side os Sandwich
Thinly spread dijon mustard on top inside of the bread. Apply 2 slices of low fat swiss cheese. Spread remaining half of the low fat ranch dressing on the cheese. Season with garlic powder and pepper to taste.

Spread Margarine On Both Outer Slices of Bread.
Place the top slice of bread on the bottom to finish building the sandwich. Lightly spread the Smart Balance margarine on both outer sides of the sandwich. Place sandwich in a pre-heated frying pan over medium heat. Cook on one side for about 1- 1 1/2 minutes until cheese starts to melt. Flip sandwich in pan. The first side should be toasted to a light golden brown. Cook on the second side about 1 more minute until the cheese is melted and the bread is a light golden brown.

Serve With Salad and Iced Tea
Serve with your favorite side salad and a cold glass of raspberry or Mint iced tea.
Tip
When creating the inside of the sandwich add ingredients in the order outlined. This helps keep the sandwich in tact and allows the cheese to melt quickly and evenly.Apply Smart Balance margarine very lightly to both outer sides of the sandwich before placing in pan. Do not press sandwich with spatula - the idea is to get both outer sides to toast to a light golden brown while keeping the inside light and fluffy.
