Spring is here, summer's on the way, and after the past winter, who wouldn't enjoy the opportunity to mix with family and friends around the patio and enjoy some great food?
For me and my crew, there's no substitute for the warm weather and the outdoor fun and enjoyment of some good old "down home" smoked portions of wings and drummers, complimented with a salad and some "just right" corn on the cob.
Of course with any great outdoor prepared meal, it takes several ingredients to make it a success.Ingredients like , the right powdered condiments mixed with the right liquid sauces to make the perfect "personal" marinade will usually work. You'll also want to throw in some patience, a little concentration, and a whole lot of positive attitude toward the task at hand in order to insure and compliment your grilled masterpiece.
It's always good to start with a little Italian dressing, some soy sauce, some powdered or minced garlic, a little Balsamic vinegar, a couple squeezes of honey and some water. Just go ahead mix it all together in a bowl. Now add about a half cup of Lawry's sesame ginger marinade and stir again.
You'll want to kill a little time now, so it's a good opportunity to light the grill, rinse your wings and drummers, and pat them dry before putting them in a large mixing bowl. While the coals settle down to medium heat, if your using charcoal, put the chicken pieces in the bowl and stir well in the marinade, coating each piece. (If you're using gas, set the temp to just below medium.)
Now, it's the "fun-time" part of your new hobby! On a gas grill, put the chicken on the upper rear burner or, if using coals, use the indirect method and place the chicken away from the coals on the "cold side". Cook with the lid on for about an hour to an hour and a half, depending on the size of the pieces and the degree of doneness. Baste with the remaining sauce about every 20-30 minutes and turn the chicken each time to prevent burning.
Go ahead now and visit with everyone. Have a soda, an iced tea, water, or even in some parts of the country, you can have a brew in your own backyard. Remember, empty cans go in the litter bag, not across the fence in the neighbor's pool.
