Groom Cake Half Raspberry Filled and Half Bavarian Cream Filled Cake

Cake:

4 c cake flour
2 c sugar
1 tsp salt
4 tsp baking powder
6 lg eggs (let them set out to get room temperature)
1 c butter (softened)
1 1/2 c milk
4 tsp vanilla

Preheat oven to 350°F. Grease and flour 2 jelly roll pans..
Mix flour, baking powder, and salt with a wire whisk.
Cream butter and sugar until light and fluffy. Beat in eggs, one at a time.

Add vanilla to mix until completely combines. Add flour slowly alternating with milk. When mixed your batter should be smooth. Put 1/2 of the cake mix in each of the jelly roll pans.

Bake for 25 - 30 minutes(times vary with each oven). Cool about 5 minutes in pan, then invert one onto a rack and cool completely, and invert the other one on your cake board and let completely cool before frosting.

Raspberry Filling:

1 1/2 c frozen raspberries
1 Tbsp cornstarch
2 Tbsp real lemon juice
1/4 c sugar

Combined all of the ingredients, bring to a boil between medium and high setting, when done put aside to cool.

Bavarian Cream

Ingredients

1/2 cup white sugar
4 egg yolks
2 cups milk
2 Tbsp. unflavored gelatin
1/2 c cold water
1 dash salt
2 c heavy cream
1 tsp pure vanilla

Directions:

Mix together the gelatin and cold water. Set aside. In a separate bowl, use a wire whiskand mix the egg yolks, sugar and salt until smooth.

In a kettle, bring the milk to a boil. Stir a small amount into the egg yolk mix, stir the egg yolk mix into the hot milk blend well. Using your wire whisk mix in the softened gelatin and vanilla. Run through a strainer and then cool.

Once cooled to room temperature, take your wire whisk and whip the heavy cream to medium stiffness and fold into it the milk and egg mixture. Then put in the refrigerator until you need it.

When cakes are cooled spread your raspberry filling over one side of the cake, and the Bavarian cream over the other side. Then frost with your favorite frosting. I like to use cool whip.

If you want to decorate it, some supplies from Wilton.com, maybe a golfer, fisher, what ever the grooms like to do.

    Why not give the groom what he enjoys. I hate fruit cake, YUK, but my husband loves it. No reason that everyone has to stick to tradition from way back when. Everyone should be able to enjoy there wedding or rehearsal dinner/grooms cakes.
